Easter Holiday Trip (Part 1)

Just wanna share some pictures of our Easter holiday. These photos are the first six nights of our stay at Lightning Ridge.

I'm Back.....To The Reality

After spending a bit over two weeks for our easter holiday which we needed desperately, now the reality kicks in. No more relaxing time, no more sleep-ins, no more lazing around. All my usual routines are waiting for me. From cooking, taking and picking up the boys to and from school, cleaning, washing, etc,etc. Too many too mention.

Well, its time to save up again for our next holiday. I'll post the story and some fotos later on in the week.

By the way, how was your Easter break? Hope you had the good one as much as mine

Happy Easter

Woohoo......Easter holiday is here. My family and I will have an easter break and will be away for about two weeks. For those who celebrate it, I'd like to wish you Happy Easter. Don't eat too much chocolate eggs :)

Pikelets Recipe

Just want to share this very simple and easy pikelets recipe. You can have them for morning or afternoon tea or even for dessert. I always double the recipe since my boys love it so much.

Here is the recipe (makes 25)
1 egg
1 tbspoon of caster sugar
1 cup of self raising flour
1 tbspoon of melted butter
1/2 cup of milk
pinch of salt

Method
Whisk egg and sugar until white and creamy. Then add the flour, salt, milk and butter gradually until smooth.
Heat a non-stick frypan over medium heat. Drop level tablespoonfuls of the mixture into the pan. When the bubbles appear on the surface, turn it over and cook other side for half a minute or until golden brown.

Serve with jam and cream, or maple syrup, or ice cream (my favourite) to make a different varieties.

Got The Evidence!!

Now I know who the culprits are. I saw them do it. I caught them stealing them. And now, I got the evidence, stored in my camera.

It was a few days ago I noticed that some of my chillies have gone. I didn't remember I picked them since they were still young and green. My boys, nope, they wouldn't go near them unless I asked their help to water it. So, who did it?

Until one morning, I saw few cockatoos sat on the edge of the balcony. They moved slowly toward my chilli tree, and snap....with the very sharp beak, they picked it. I quickly ran to get my camera...bugger....no batteries. So no evidence was taken that morning as I shooed them away before my chillies were completely gone.

It wasn't until the next morning that I had my camera ready in my hand and waited for those beautiful but naughty birds came back. This time, I got it. Yes, I got the evidence...MISSION ACCOMPLISHED

A Very Proud Parents

Last Friday was a presentation day at my boys little athletic club, after six months competing at track and field events. It was every Friday from six o'clock in the evening till about eight, Ari and Jamie competed in the events such 70m, 100m, 200m, 100m hurdles, long jump, high jump, discus, and shot put. They were awarded points for every event that they enter and received a bonus point every time they have better personal best record.

And the results are Ari came fourth, just missed out on the podium, and Jamie came third. Fantastic effort boys. Both of my boys have made Steven and I standing up very proud with their achievement. For us, to be champion is not important, we are so happy as long as they have fun and enjoy themselves.

After Jamie got his trophy, he said that next season, he will try harder and he wants to be number one. Very good attitude, as I didn't expect he would say that. Well done Ari and Jamie......
